The Island Gelato Recipe for our Ice Cream Cakes :

Layers of Coconut gelato, woodland berry sorbet, mixed berry mousse, kiwifruit jam on a meringue and white chocolate bubble base, covered in a gooey vanilla meringue, torched and dusted with freeze dried berries, kiwifruit and white chocolate shavings. 

Creatively inspired by our classic Kiwi & Berry Pavlova. Traditionally, they are the centre piece of every kiwi Christmas table, laden with fruit.

SERVES: 10 – 14 adults

STORAGE:  All our cakes should be stored in the freezer until 15-20 minutes before serving.

SERVING TIPS:

Layers of Mango Lassi Gelato, Mango lime Passionfruit sorbet, gooey orange jam centre, on a white chocolate and passionfruit Rice bubble base, covered in a passionfruit glaze and scattered with passionfruit seeds.

Creatively inspired – This is our homage to one of the best fruits ever, the Mango. By pairing it with other tropical fruits to bring out the best flavour profiles of one another.

The Island Gelato Recipe :

Layers of Vanilla Bean Gelato, Wild Berry Sorbet, Rich Chocolate Gelato, gooey chocolate fudge sauce centre, on a Chocolate Rice bubble base, covered in a raspberry marshmallow fluff and hand piped rosettes. 

Creatively inspired by the Neapolitan. The Island Gelato version is made up of decadent layers of real berries, chocolate and vanilla.
