The Island Gelato Recipe :
Indulge in this decadent Espresso Martini gelato cake. With layers of Espresso & Salted Caramel gelato, Kahlua mousse, Kahlua gel and a Chocolate sponge base.
Creatively inspired Inspired by classic Italian desserts and the love of espresso coffee. This Espresso Martini Italian Ice Cream cake combines our gelato’s smoothness with Kahlua mousse’s richness and the sweetness of white chocolate and dark chocolate glaze. The chocolate sponge base gives the cake a sturdy base, while the espresso gelato and salted caramel gelato provide a sweet and salty flavour.
SERVES: 12 – 14 adults
STORAGE: To be stored in the freezer until 15-20 minutes before serving.

SERVING TIPS:
- Take your Gelato cake out of the freezer and into the fridge 15-20 minutes before serving.
- Ensure the cake board is on a flat surface for slicing.
- Cut your cake slice into wedges to enjoy a section of each layer
